Ibérico Pork Presa

A compact cut from the upper shoulder near the loin, Presa is a heavily marbled muscle with dark red meat and a dense, steak-like texture. It has a pronounced, full-bodied pork flavor, while its abundant intramuscular fat keeps the meat moist during cooking and contributes delicate nutty notes. De Raza Ibérico has been producing pure Ibérico pork in Spain since 1996, with its pigs roaming freely through open oak pastures and feeding naturally on acorns and grass.
