Black-Leg Chicken Supreme

From the Landes woodland in Southwest France, Black-Leg chickens are raised slowly in total freedom, developing firm, lean meat with a naturally rich flavor. They spend the year outdoors, foraging among the woodland before returning to mobile timber shelters (known as "Marensines") at night. Their diet is based on wheat, with less corn than typically used for chicken, helping maintain the meat’s deep color and character.

With a minimum rearing period of 81 days, these chickens develop a noticeably firm texture and full, savory flavor.
