Black-Leg Chicken Leg

Raised in total freedom in the Landes woodland of Southwest France, Black-Leg chickens are a slow-growing, rustic strain with a naturally firm, lean texture and distinctive flavor.

The birds roam freely, forage and explore the woodland throughout the year, returning at night to small mobile timber shelters known as Marensines. The region’s oceanic climate and sandy soils allow them to remain outdoors year-round. Their wheat-based diet, with less corn than conventional corn-fed chickens, helps preserve the naturally deep colour of the meat and contributes to its particularly pronounced flavour. Raised for at least 81 days, the slower growth allows the meat to develop a firm, substantial texture.
