Set on the eastern slopes of New South Wales' Riverina region, Gundagai Lamb was founded by the Barton family in 2020, drawn to the region's warm climate and boundless pastures ideal for raising lambs freely. Gundagai became the first lamb producer in the world to measure marbling and lean meat yield in every lamb carcass, using advanced biophotonic technology. Combined with animal health data, this comes together in the GLQ (Gundagai Lamb Quality) Score, their own grading system, with every lamb held to the GLQ5+ standard.
Each lamb also carries an RFID tag, tracing its data back to the farm. Farmers use this feedback to refine breeding and feed decisions, steadily raising the quality of the flock — the payoff is fine, even marbled meat delivering natural tenderness and sweetness in every cut.
